I felt pretty good about this one! I've been making Chicago pan pizzas for the past year and a half. I haven't kept track but I'm somewhere around 20. I feel like I've made a lot of good progress and this one had almost everything going for it. I think the amount of toppings weighed it down in the middle a bit so it didn't rise as much as I'd like it to have, but that's about the only thing I was unhappy about.

I bought a cheap Gourmia pizza oven and really like it so far. I know it's not an Ooni but for now it fits the bill. I think my next steps are better ingredients and a better sauce. I found there's a restaurant supplies grocer in town so I'm going to check them out. Then after that I can play around and do more interesting ingredients. So far I pretty well stick to classics.
