If you want an easy weeknight pasta that still feels fancy, this Spam carbonara is the move. Itโ€™s a simple carbonara technique using eggs and Parmesan or Pecorino, with crispy diced Spam standing in for pancetta. Fast, affordable, and honestly good.

๐Ÿฅฃ Ingredients
Spaghetti 225 g (8 oz)
Spam 150 g (about 1/2 can), diced small
Eggs 100 g (2 large)
Parmesan or Pecorino Romano 50 g (about 1/2 cup), grated
Garlic 3 g (1 clove), smashed (optional)
Olive oil 14 g (1 tbsp)
Black pepper 2 g (1 tsp), freshly cracked
Salt for pasta water
Reserved pasta water 120 g (1/2 cup)

Boil spaghetti in salted water until al dente. Reserve pasta water, drain.
Heat oil in a skillet. Crisp Spam 5 to 6 minutes. Add garlic if using, then remove it.
Whisk eggs, cheese, and pepper in a bowl.
Add pasta to skillet with Spam, remove from heat, and toss in egg mixture.
Add splashes of pasta water until a silky sauce forms.
Plate and top with more cheese and pepper.
