Leo Spizzirri the co-founder of the academy is a certified pizzaiolo. There are only 100 of them in the entire world!! There are only two certified schools in America and the Academy is one of them. They are part of the Scuola Italiana Pizzaioli, which is the oldest pizza school in the world and the headquarters are located in Venice, Italy. The Academy is a beautiful space and very welcoming. Leo and his co-founder Anthony Iaonne have spared no expense in quality and applications. Their dough mixing room is so advanced they can duplicate any climate in the world! Their pizza ovens are just stunning. I learned so much about every aspect of pizza making and even learned how to properly hand stretch pizza dough! Leo’s knowledge about all pizza’s is mind blowing. Such a great teacher! Had so much fun hanging out with him! Still thinking about how delicious the Margherita Pizza’s we made were.
