This is a pepperoni and sausage.. I used a baking steel with the oven rack in the lowest position. I have an electric oven that goes to 500. The next time I'm gonna put smaller sauce stripes. I used a mix of 50% brick, 25% mozzarella and 25% Monterey jack. It took 17 minutes at 500.
