Italian Pesto Focaccia Sandwich
Ingredients:
• Focaccia bread
• Olive oil (for toasting)
• Homemade pesto sauce
• American cheese slices
• Fresh tomato slices
• Rocket leaves / arugula
• Bocconcini or fresh mozzarella
• Chilli oil (to finish)
Method:
1. Lightly toast focaccia with olive oil until crisp and warm.
2. Spread a generous layer of pesto on the base.
3. Add American cheese and let it melt slightly.
4. Layer tomatoes, rocket leaves and mozzarella.
5. Drizzle chilli oil.
6. Close the sandwich, slice and enjoy ☀️
