











Pasta with smoked oysters, inspired by Southern Italian style. Out of pasta dishes I've made, this one is my favorite. It has an oceanic scent and flavor with good umami, mixed with lemon and tiny spice kick.
Ingredients: Fresh linguine, smoked oyster can, anchovies, garlic, grape tomatoes, bread crumbs, parsley, pepper flakes, olive oil, white wine, lemon, salt
Toast bread crumbs with olive oil at medium heat until they're brown. Put them away once done and wipe the pan
Lower the heat to medium-low and add generous amount of olive oil, anchovies, minced garlic, and pepper flakes. Stir and grill
While anchovies are dissolving and garlic are getting soft, add grape tomatoes cut in 1/4 (not to be crushed), then increase the heat up to medium-high and add white wine. Let it bubble until alcohol scent is gone
Once alcohol scent is gone, reduce the heat to medium-low and add some parsley and stir. Then add pasta water 1 minute before tossing in boiled pasta
Toss in boiled pasta at medium heat and add lemon juice
Stir pasta vigorously so the sauce blends in. Add pasta water as sauce is absorbed. Add a slight bit of olive oil
Add smoked oyster and some of its oil from the can, and continue stirring towards the end. Leave some oysters behind for plating.
Remove the pan from the heat, then final mantecatura
Plate the finished pasta and add toasted bread crumbs, parsley, lemon zest, and remaining oysters
