Ingredients • 3 medium tomatoes (half-cut) • 1 small onion (sliced) • 6–7 garlic cloves • 1–2 tbsp oil • 1-2 tsp tomato paste(optional, for richer flavor) • Salt to taste • ½ tsp black pepper • ½ tsp red chilli flakes • ½ tsp mixed herbs / oregano • A pinch of sugar • 3–4 fresh basil leaves • ¼ cup fresh cream • 1 cup boiled pasta • Pasta water as needed • 1 tbsp butter

Method • Boil pasta, reserve some pasta water. • Heat oil, add tomatoes (cut side down), onion & garlic. • Cover & cook till soft and lightly charred. • Cool slightly, peel tomato skins. • Blend with salt, pepper, chilli flakes, herbs & little pasta water. • Heat butter, sauté tomato paste briefly. • Pour blended sauce & simmer. • Add sugar, cream & basil. • Adjust consistency with pasta water. • Toss in pasta, coat well. • Adjust seasoning, garnish with basil & serve hot. 🍝✨
