Tiramisu
500g x Mascarpone Cheese
300g x ladyfingers
4 x Medium Eggs
100g x Caster Sugar
300ml x Espresso Coffee
90ml x Coffee Liqueur (optional)
Cocoa Powder for dusting
Dark Chocolate (optional)
1. Begin by making your coffee, mix in the coffee liqueur if using and leave to cool.
2. Separate the egg whites from the yolks and place each in separate mixing bowls.
3. Beat the egg whites until stiff peaks and set to the side. In a separate bowl add the caster sugar to the egg yolks and whisk until light, fluffy and pale in colour. this will take 3 to 5 minutes.
4. Place the mascarpone into a bowl and soften it using a spoon. This will help it incorporate into the egg yolk mixture easier.
5. Add the mascarpone to the egg yolk mixture and using a beater attachment, mix for 2 to 3 minutes until smooth and creamy and then fold in the egg whites.
6. Next, dip the ladyfingers into the coffee mixture (Don’t allow them to soak for too long) and arrange them in an even layer on the bottom of your chosen dish.
7. Layer up with the mascarpone mixture and fingers until the mixture is fully used up.
8. Finally, dust the top generously with cocoa powder and grate over some chocolate if using.
9. Set in the fridge for 1 to 2 hours before serving. Ideally make it the day before and allow it to set overnight.
