FOOD THAT F****! Ep. 95 This Italian spot on Haarlemmerdijk serves fresh pasta the way it should be done. I started with the rigatoni all’amatriciana, one of those classic Roman dishes that’s simple on paper but shows you everything about a kitchen’s skill. Crispy guanciale, tomato, and pecorino. When it’s done right, the pork fat renders into the sauce, the pecorino melts in, and everything coats the rigatoni perfectly. They nailed it. Also had the tagliolini ai funghi with sautéed mushrooms and a touch of spice. The pasta was earthy and rich without being heavy, and the spice added just enough heat to cut through the mushrooms. Both dishes had that proper bite to the pasta, cooked just shy of soft. Finished with tiramisu for dessert, which was creamy and boozy in all the right ways. The name “Scarpetta” comes from the Italian tradition of using bread to wipe your plate clean, and after eating here, you’ll understand why that’s worth honoring. @scarpetta.amsterdam
