Riso al salto looks like grilled polenta. I do this with left over polenta. Grilled polenta and grana. What a meal. My parents are from the Friuli.
NO WAY! As Italian it's a shame to make a Risotto alla Milanese with vinegar you are completely WRONG! you need to learn how to do from a real master chef Cesare Battisti!
