In this video, I show you how to build deep flavour using time, gentle heat, and technique, not meat. We take San Marzano tomatoes and cook them low and slow until silky and rich, balanced naturally with a classic Nonna trick to fix acidity without sugar.
Once the sugo is ready, we transform it into an incredible Pasta al Forno (Italian Pasta Bake). The pasta stays al dente, the sauce stays loose, and the mozzarella and Parmigiano form the perfect golden crust. Simple food. Done properly. No shortcuts.

  2. 5:00 The problem with Mozzarella in my country is the brands we have are so tasteless, it is like the most tasteless thing I have ever tasted. Or maybe it is better to say mozzarella is the thing I never tasted. I think the brand is called "Galbani". It is the most tasteless thing ever. It is just white and that is it. Nothing.

  3. By the way those cans are definitely not san marzano tomatoes and probably just regular roma. Mutti does do san marzano in a can but it is not those cans

  7. nice dish , although i think i would add some breadcrumbs [crotons] to the top to soak up some of that lovely sauce….but that view at the end, with that red skyline is to die for…..ah well but to the grey leaden skies of england for me 😛 we do have the advantage of it not being that hot, i guess :O)

  14. Looks good indeed. I went over to the printed menu area. My anti-virus had a fit about the "print here" in the recipe. Is that your print here, or just an abomination that your web hosting service is allowing to pop up on your wonderful website?

  15. I made this for dinner Monday night and it was bloody delicious! I used three pork ribs because like bacon, more is better! Will definitely be making this again as it was packed with so much flavour. Cooking the sauce for three hours makes a world of difference.
