Local shop was out of my usual Caputo, so I grabbed a bag of Bob’s Red Mill instead. I was a little skeptical, but I just finished a batch of fettuccine and it’s actually solid.

The differences:

• Caputo feels a tiny bit silkier while kneading.

• Bob’s has a slightly sturdier "bite" once it’s cooked.

Overall, once the sauce is on, there’s really not much difference. If you can't find the Italian brands, this is a great backup.

    In general, I’m a fan of Bob’s with exception of the semolina, which is nowhere near as good as Caputo. I have not seen the 00, though, will definitely try it out if I find some!
