Parantha/Stuffed flat bread
Ingredients for stuffing
2 regular potatoes
1 sweet potato
1/2 tsp roasted cumin powder
1 tsp coriander powder
1/4 tsp chili powder
1/2 tsp carom seeds crushed
1/4 tsp Italian seasoning
4 cloves garlic chopped/minced ( as per preference use less or more)
1/2 inch ginger minced ( use leads or more per preference)
Salt per taste
Method of making the filling
– Steam the potatoes
– Mash
– Add spices: Ginger, chili, coriander, cumin, carom seeds, Italian season, salt.
Give it a good mix. Adding sweet potatoes enhances the flavor with its natural sweetness. Therefore, the taste is amazing.
Dough ingredients
– 1 cup wheat flour
– Water
– 1tsp ghee
Making of the Dough
Add water slowly to the flour till well combined in to a soft dough just like roti dough. Then take little water and punch into the dough making dents or hole. Then allow it to rest for 10 minutes.
Now going back to the dough, the water has been absorbed and dough is nice and soft. Now, add ghee and give a good knead.
Leave the dough to rest for 5 minutes. It will be nice and soft dough easy to work with.
Making of the Parantha
Roll out dough dusting with flour so it is easy to roll with ease . Then take the four corners and stretch with the rolling pin to give a square shape. Add in the filling, shaping into a square and press the filling. Close from the four ends securing the filling and gently press. Then dip it into the flour dust of the excess flour and gently roll into a square shape.
Add a hot skillet. Let it cook for couple of seconds. Then turn, applying ghee. Gently move it and then turn allow it to puff applying more ghee. If well cooked place it on a plate.
Enjoy with pickles, dollop of butter or ghee and some salsa!
