Homemade Ladyfingers
Ingredients
• 6 large eggs, separated
• 150 sugar total
→ 100g for whites / 50 g for yolks
• 2 tsp vanilla
• 170g all-purpose flour
• 20g cornstarch
• Pinch salt
• Powdered sugar for dusting

Method
1. Whip whites + salt → soft peaks. Gradually add 100 g sugar → glossy medium-stiff peaks.
2. Beat yolks +50 g sugar + vanilla until pale and thick.
3. Fold yolks into whites gently.
4. Sift flour + cornstarch over → fold just until combined.
5. Pipe 4-inch x ¾-inch fingers on parchment.
6. Dust heavily with powdered sugar.
7. Bake 350°F / 175°C for 12–14 min until lightly golden.
8. Rest 2–3 min → move to wire rack → cool completely.

Mascarpone Cream

Ingredients
• 7 large egg yolks
• 200 g sugar
• 500 g mascarpone (cool room temp)
• 500 g cold heavy cream
30g Powdered Sugar
• 1½–2 tsp vanilla bean paste

Method

1. Whisk yolks + sugar over a double boiler 8–10 min until pale, thick, and ~160°F / 71°C.
2. Beat 8-10 min until fluffy.
3. Beat in mascarpone until smooth.
4. Whip cream with 25–30 g powdered sugar + ½ tsp vanilla to soft-medium peaks.
5. Fold whipped cream into mascarpone base gently.

(Optional: chill cream 10–15 min before layering if soft.)

Strawberry Syrup + Filling

Ingredients
• 700 g strawberries, sliced
• 120 g sugar
• 2–3 tbsp lemon juice
• 1 tsp vanilla bean paste
• Extra 150–200 g strawberries, diced

Method
1. Toss sliced strawberries + sugar + lemon + vanilla.
Macerate 20–30 min.
2. Transfer all berries + liquid to saucepan.
Simmer 8–12 min until berries are soft.
3. Strain ALL liquid into a container → this is your ladyfinger dipping syrup.
4. Return cooked strawberry solids to the pan.
Simmer 5–8 min until thick, jammy, and reduced.
5. Remove from heat → stir in extra diced strawberries gently.
6. Cool completely.

🧱 Layering (9×13 Pan)

1️⃣ Thin base layer of mascarpone cream
2️⃣ Ladyfingers — quick dip in thick strawberry syrup
3️⃣ Mascarpone cream
4️⃣ Thick cooked strawberries + diced fruit
5️⃣ Ladyfingers — dip again
6️⃣ Mascarpone cream — smooth top
7️⃣ Finish with:
• Freeze-dried strawberry powder
• White chocolate shavings

❄️ Chill

Refrigerate 6–12 hours (overnight = best texture + clean slices)

Top with Strawberry Powder and Strawberries ( Optional )
