
Being an Italian man from the northeast makes me an authority figure when it comes to pizza. Trust me when I say that bar pizza is one of the best styles out there.
The crust is thin and cracker like, the underside is always perfectly crisp, the tomato sauce needs to be low moisture to keep it crisp so it’s a base of crushed tomatoes, usually San Marzanos. Most places use a blend of cheese, typically cheddar with mozzarella and it's always 8-10 inches.
You can get this type of pizza mostly in the south shore but there is a famous spot in Boston too.
