👨‍🍳 Campbell’s Copycat Italian Wedding Soup
Makes: 1 can equivalent, about 300 to 320 g

🥣 Ingredients

Meatballs, all beef
Ground beef 80 g (about 2.8 oz, 80 to 85 percent lean)
Breadcrumbs 10 g (about 2 tbsp)
Whole milk 10 g (about 2 tsp)
Egg yolk 18 g (1 yolk)
Parmesan, very finely grated 10 g (about 2 tbsp)
Kosher salt 1 g (about 1/4 tsp)
Black pepper 0.2 g (pinch)
Garlic powder 0.3 g (about 1/8 tsp)

Soup base
Unsalted butter 10 g (about 2 tsp)
Yellow onion, very finely minced 25 g (about 3 tbsp)
Celery, very finely minced 15 g (about 2 tbsp)
Carrot, very finely minced 15 g (about 2 tbsp)

Liquid
Chicken broth 420 g (about 1 3/4 cups)
Water 60 g (about 1/4 cup)

Pasta and greens
Acini di pepe or tiny pasta 20 g dry (about 2 tbsp)
Spinach or escarole, very finely chopped 20 g (about 3/4 cup packed)

Seasoning
Kosher salt 3 g (about 1/2 tsp)
White pepper 0.3 g (about 1/8 tsp)
Onion powder 0.5 g (about 1/4 tsp)

Optional boosters
Chicken bouillon 0.5 g (small pinch)
MSG 0.25 g (tiny pinch)

🥄 Instructions

Make the meatballs
Mix breadcrumbs and milk, rest 1 minute.
Add beef, egg yolk, Parmesan, salt, pepper, and garlic powder. Mix gently.
Roll marble size meatballs.

Soften vegetables
Melt butter over medium low.
Cook onion, celery, and carrot 5 to 6 minutes until very soft, no browning.

Build the broth
Add broth and water. Bring to a gentle simmer.

Cook meatballs
Drop in meatballs. Simmer 6 to 7 minutes until cooked through and soft.

Add pasta
Add pasta and simmer 8 to 10 minutes until very soft.

Add greens
Stir in greens 1 to 2 minutes until wilted.

Season
Add salt, white pepper, onion powder, and optional boosters. Taste.
Broth should be thin and clear, everything tender and uniform.

• Tiny meatballs are the whole vibe. Marble size, not meatball size.
• Keep heat gentle and avoid browning the veggies so the broth stays pale and mild.
