

This is an Indian take on the thin crust Roman pizza style. The crust contained a percentage of chick pea flour (Besan), cumin seeds, ajwain seeds, and kasuri methi.
The toppings were a spiced ricotta cream base, mozzarella, masala seasoned spinach, crumbled requeson cheese (to emulate paneer). 63% hydration, direct mix, 24 hr cold ferment
It was a successful experiment
