Roasted cherry tomato pasta | This is one of those recipes that feels fancy but is actually very low effort! Everything roasts in the oven, gets blended, and turns into the creamiest sauce 🍝☺️
Ingredients:
2 cups cherry tomato
4 cloves garlic
1 medium Onion
7-8 Cashews
Salt & Pepper TT
5-6 Basil leaves 3 tsps Chilli flakes
1 tsp lime juice 1/4th cup Parmesan cheese + more to garnish
Pasta Water
1.5-2 cups of pasta of choice
Process:
– Preheat the oven to 220 C
– Start by washing the cherry tomatoes well
– Add them to a baking sheet lined with parchment paper
– Add the cherry tomatoes to it along with chopped onion
– Add the garlic, cashews, salt and oil to a piece of foil and fold it up
– Drizzle the tomato & onion with oil, salt & pepper
– Bake at 220 for 30 minutes until charred
– Cool the veggies down and add everything to a blender and blend till smooth
– Boil the pasta in salted boiling water until al dente (80% cooked)
– Save 1 cup of the pasta water
– Heat up oil in a pan, add in chilli flakes
– Add the sauce and pasta water and combine
– Add the cooked pasta and adjust the consistency with pasta water
– Finish with basil, Parmesan cheese and lime juice
– Serve and enjoy!
