  4. I use the pizza steel but my oven has a top drawer gas broiler, and I set it to 550 degrees. But those flames are just a few inches away from the steel AND then the pizza, so, it is done in real fast, with nice airy bubbles you need to keep and eye and pop, so they don't burn. But the crust looks like it came out of a real pizza oven.

  5. Dont use a calculator like that every time. The flour in your area will absorb different amounts of water and the condition of your cooking area matters a bit too. So use the calculator once and then play around with it each time you remake and note the changes. Always keep your flour the same

  6. Interesting as two of the ingredients he always claims to not like are extra oil and parmesan.
