One of my personal favorite YouTube foodies made a meatball video recently that I just had to try. The results were really good so I decided to give it a try myself and make a few minor tweaks after trying it the first time. These meatballs are fantastic and here’s the recipe!

1 pound ground beef (I used 80/20 Ground Chuck)
1 Tablespoon kosher salt
1 1/2 tsp black pepper
1 egg
2 slices white bread, edged, cubed, and soaked in whole milk (See video)
2 cloves finely minced garlic
1 heaping tablespoon ricotta cheese

2 Tablespoons chopped parsley (more for garnish)
1/4 cup grated pecorino romano cheese (more for garnish)

Make your meatball mixture up to 24 hours in advance if you like… Preheat your Kamado Joe to 425°F. Form your meatballs in to 2oz balls. Cook until the internal temperature reaches 160°F, about 20 minutes +/-.
