My first attempt at baking some pies. Hydration was around 68%. Sausage jalapeno was a 72 hr ferment and the sausage green pepper was a 48. Couldn’t really tell a difference from the dough if I’m being honest. Cooked in a home oven 500Β° for 6 minutes, broiler for 2. Overall happy with how they came out.
