Home canned Italian style pot roast is a rich, hearty meal that’s perfect for building a shelf-stable pantry. In this video, I show you how to pressure can beef pot roast safely at home using vegetables, garlic, onions, and classic Italian herbs. This home canned pot roast recipe is ideal for quick dinners—serve over pasta, mashed potatoes, or polenta for an easy homemade meal anytime.
For every 2 quart or 4 pint jars you will need:
2 lbs. beef chuck roast, trimmed and cut into 2″ chunks
1 c. peeled and diced potatoes
1 c. sliced carrots
1 c. diced onions
1/2 c. diced celery
2 t. salt
1 t. black pepper
2 bay leaves
2 garlic cloves, sliced
1 t. each dried thyme, dried oregano, dried parsley
1 c. dry red wine
4 T. tomato paste
Beef broth
Fill hot pint or quart jars with meat and vegetables to 1″ headspace, add liquid seasoning and hot broth leaving 1″ headspace. Remove air bubbles, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:

0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.
⚠️ This recipe uses a pressure canner only and follows tested home canning safety guidelines.
This recipe CANNOT be safely water bath or steam canned.

Love that they offer small batches for the meals so we can try before we have a bunch on hand
I absolutely love recipes that are meals in a jar. I'm an elementary teacher and by the time I get home I'm exhausted. Easy suppers are wonderful things to have on my shelf. I'd leave the celery out too… not my favorite ingredient. Thanks for the tips and tricks (like the division of bay leaf and reconstituting the bullion). This is what I love having in my pantry, meals ready to heat and serve. I usually can everything in pint jars as it’s just husband and self. Easy enough to open an additional jar if having company. Thank you for your excellent instructions!

Thank you for explaining the rocker jiggling and adjusting heat. I have an all American canner and have been having siphoning, lid not on right, too hot, too cold etc with this canner.
