These juicy pork chops with mushroom gravy make the perfect cozy Sunday dinner 🍄‍🟫🌿

Ingredients:
– boneless pork chops
– olive oil
– salt & pepper
– dried thyme
– dried parsley
– butter
– sliced onion
– celery
– chopped baby bella mushrooms
– garlic
– flour
– 2 cups beef stock
– 2 tablespoons tomato paste
– fresh chopped parsley
– russet potatoes
– milk

Instructions:
– drizzle olive oil on pork chops and season both sides with salt & pepper, thyme, and parsley
– heat a large sauté pan over medium-high heat (mine is from @carawayhome – use EATSWITHALLY for 10% off)
– sear pork chops on both sides until golden brown crust forms
– remove pork chops from pan and add in 1 tbsp butter
– sauté onions, celery, mushrooms and garlic until fragrant
– add in a tablespoon of flour, stirring for 1 minute
– add in beef stock and tomato paste and bring to a boil, lower heat and simmer until slightly thickened
– add pork chops back to pan, spooning gravy over top, and simmer 15 minutes
– serve over mashed potatoes and top with fresh parsley
