90/10 KA Bread/Whole Wheat.
Homemade Créme Fraîche seasoned with fresh ground peppers & 1% Sea Salt as base. Chopped White button Mushrooms, Red Onions, Shishito Peppers
Gas oven, 500max, Preheated for an hour with Stone. Baked for 10 minutes with one 180° turn at the 6 minute mark.
6oz of WMLM Mozzarella, Finished with Grated Parmesan, Oregano, Red Chilli Flakes.
Love the browning that resulted without any sugar/malt. Bonus: I had very small blisters on the crust.
My 16 inch turned to 14 inch from the sides but this turned out good. Crispy bottom with soft bite in the middle. I do feel like the middle was twice as thick due to mess up during the launch.
