Dough recipe
Flour (00): 360 g
Water: 245 g
Salt: 4.5 g
Yeast (instant dry): 4 g
Olive oil: 14 g
Sugar: 9–10 g
➡ Total dough ≈ 636 g
✔ 2 pizzas ~320 g (thick, fluffy)
✔ or 3 pizzas ~210 g (classic Neapolitan size)
Mix → Rest → Knead → Rise (2.5–3 hrs) → Ball → Rest (45 min) → Bake
Preheat at least 30–40 minutes
Bake at max oven temp (250–270°C) for 6-8 mins
