Dough recipe
Flour (00): 360 g
Water: 245 g
Salt: 4.5 g
Yeast (instant dry): 4 g
Olive oil: 14 g
Sugar: 9โ10 g
โก Total dough โ 636 g
โ 2 pizzas ~320 g (thick, fluffy)
โ or 3 pizzas ~210 g (classic Neapolitan size)
Mix โ Rest โ Knead โ Rise (2.5โ3 hrs) โ Ball โ Rest (45 min) โ Bake
Preheat at least 30โ40 minutes
Bake at max oven temp (250โ270ยฐC) for 6-8 mins
