This healthy Stuffed Cabbage with red rice. Good for those who’s health concious one or on diet. Very light dish. In fact I can eat 3 rolls of this or up to 4 🙂 since red/brown rice is higher in fiber compared to white rice so not soo heavy on stomach. By cooking your red rice like this it’s give more taste on it 😋.

Here’ s all you need:
Ingridients for 8 rolls
6 to 8 leaves white/ Savoy cabbage
250 G Ground Beef
1 small minced carrots
1 cup brown/Red Rice
1 small onions/ Spring onions
1/2 cup pesille/peas
2 tbsp. Cooking oil / olive oil
Pinch of curcuma/ turmeric
Salt/ Sale
Method:
Step 1: In a Pot, Soak rice with 2 cups of water, pinch of salt. (Set aside for 20 min.) Note: Remember Brown rice takes long time to cook, so must soak in water first. Then bring to boil over medium to slow high heat. Cook for about 45 min.
STEP 2: Prepare Cabbage leaves to steam. I used white small Cabbage and I Removed it one by one while still fresh. IF YOU find difficult to remove it. You Can steam whole Cabbage or put derictly in a boiling water. ( steam/ boil 5min Careful not to tear the leaves when you separated you can cut a bit to remove thick part of the rib) set aside to cool.
Step 3: In a large sauce Pan Heat the cooking oil, add minced onions, wait until comes lightly brown, Then add the Meat, Minced Carrots, pinch of salt and turmeric/curcuma. Mix well, half way through cooking, add Peas and half cup of water. ( simmer 15 min. THEN, drain SEPARATE the stock, and the meat mixture)
STEP 4: Combine the cooked Rice and Meat mixture in a Large bowl.
Step 5: Forming a Cabbage roll. Use 1 leaf of cabbage and scope 2 tbsp. Mixture. Fold each side of cabbage before forming a Roll. Repeat the process till finished.
STEP 6: Arrange the stuffed Cabbage in a Large pot/Pan. Pour the stock of meat. Let SIMMER in a very slow fire. For about 30 min.
SERVE immediately..
