*Pesto Recipe*

*1/3 cup pine nuts, toasted at 350 degrees (watch closely, do not burn)

*1 Tbsp. lemon juice (optional)

*2 garlic cloves, smashed

*1/2 tsp. kosher salt

*1/4 tsp. ground black pepper

*1/4 tsp. red pepper flakes

*2 1/2 cups packed fresh basil leaves

*2/3 cup extra virgin olive oil

*1/2 cup grated parmesan cheese

In a food processor, combine the pine nuts, lemon juice (if using), garlic, salt, black pepper, and red pepper flakes. Pulse until the pine nuts are finely chopped and the ingredients are well combined, scraping the sides of the processor bowl with a rubber spatula. 

Add the basil and pulse to combine. With the food processor running, slowly stream in the oil until well combined. Add the parmesan cheese and pulse to combine.

Cook pasta al dente and add pesto sauce, roasted corn off the cob kernels, sautéed red bell peppers and combine.

Cook ground pork sausage in a medium pan until crumbled and cooked through. Season with salt and black pepper to taste. Drain and add to pasta mixture. Combine and plate. Top with Parmesan.
