Preheat the oven to 400F (200C). Place the frozen veggies (do not thaw them) onto a baking sheet lined with parchment paper. Season with salt and pepper or any seasoning of your choice. Drizzle with 2 tablespoons of olive oil. Toss to coat the vegetables and spread in an even layer on the baking sheet. Bake for 25 to 30 minutes or until the vegetables are heated through and golden brown.
