


I’ve been making sourdough bread loaves for about 6 months now and this was my first attempt at sourdough pizzas.
I’ve got a Everdune Kiln that I got for Christmas 2024. It’s got some quirks, but it’s not a bad little oven.
– Regular pepperoni for my kid
– Pepperoni and homemade diced Texas hot link sausage for my wife
– A half & half for me: half pep & sausage, half pesto, mozz and ricotta
Flour (500g total):
• 350g bread flour (70%)
• 150g 00 flour (30%)
Other:
• 335g water (67%)
• 100g active sourdough starter (100% hydration)
• 11.5g salt
• 5g olive oil
