

Peri Peri Chicken Pizza is pretty popular here in Australia. Had some left over Peri Peri Chicken so I figured I’d use it! Parkbaked with the cheese (I like crispy with this topping) topped the chicken, red onion and threw it back in for a few minutes to set. 60% hydration. Finished with perinaise (peri peri sauce with mayo (about 50/50 loosened with lemon juice) finished with herbs too and garlic butter brushed on the crust whilst it’s still warm. Few dots of Peri Peri sauce for flavour hits. 👌
