I made this Marry Me Chicken Pasta recently and it turned out incredibly creamy, comforting, and full of flavor. Tender chicken, a rich Parmesan cream sauce, and sun-dried tomatoes come together in one skillet and itโ€™s honestly hard to stop eating it.

It looks fancy, but itโ€™s very doable on a weeknight and doesnโ€™t require anything complicated. Sharing in case anyone is looking for a cozy pasta dinner idea.

Ingredients

  • 2 large chicken breasts, sliced into cutlets
  • Salt & black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 4 garlic cloves, minced
  • 3 tbsp tomato paste
  • ยผ cup white wine
  • 1 cup chicken stock
  • 1ยผ cups heavy cream
  • โ…“ cup sun-dried tomatoes, chopped
  • 1 tsp dried oregano
  • Zest of 1 lemon
  • 1 tbsp lemon juice
  • 5 fresh basil leaves, sliced
  • 12 oz penne pasta
  • ยผ cup reserved pasta water
  • ยฝ cup grated Parmesan

Instructions

  1. Season chicken with salt and pepper. Add to a cold skillet with olive oil, then heat to medium-high and sear until golden. Flip, cook through, and set aside.
  2. In the same pan, melt butter. Add onion and garlic and cook until soft.
  3. Stir in tomato paste and cook until slightly caramelized.
  4. Deglaze with white wine and simmer briefly. Add chicken stock and cream.
  5. Stir in sun-dried tomatoes, oregano, lemon zest, lemon juice, and basil. Simmer until creamy.
  6. Return chicken to the sauce and keep warm.
  7. Cook pasta until al dente, reserving some pasta water.
  8. Remove chicken, add pasta to the sauce, loosen with pasta water, and stir in Parmesan.
  9. Slice chicken and serve over the pasta.
