Like a giant meatball in loaf form! This juicy chicken meatloaf is loaded with parmesan, fennel, and topped with a buttery parm crust that’s pure gold. Comfort food with an Italian twist! 🇮🇹

Ingredients:
2 large eggs
¾ cup half and half
3 tbsp Worcestershire sauce
1¼ cups breadcrumbs
1½ cups grated parmesan (divided)
1 medium onion (minced)
3 cloves garlic (minced)
¼ cup fresh parsley (chopped)
½ tbsp fennel seeds (roughly chopped)
1½ tsp salt
1 tsp pepper
¼ cup salted butter
2 lbs ground chicken

Instructions:
1️⃣ Preheat oven to 375°F
2️⃣ Whisk eggs in a large bowl. Add cream, breadcrumbs, ½ cup parmesan, onions, garlic, parsley, fennel seeds, Worcestershire, salt, and pepper. Mix until breadcrumbs absorb the liquid
3️⃣ Add ground chicken and gently mix until evenly combined (don’t overmix!)
4️⃣ Line a baking sheet with parchment. Form meat into a loaf, pressing edges firmly
5️⃣ Mix butter and remaining parmesan. Spread over the top in an even layer
6️⃣ Bake until golden brown and bubbly, internal temp reaches 165°F
7️⃣ Rest for 10 minutes before slicing. Serve it up and enjoy! 🍽️💯
