

A bit short on chorizo but still enjoyed making and eating them. After 5 months practicing with this oven, i can finally have consistant results and I learned a lot thanks to this sub so here's my contribution.
recipe is
100% caputo 00, 63% water 1% olive oil, 2% salt.
48H cold proof then balling 5h at room temp
Oven: diavola pro 2 heated at 380-400°C, cut the bottom resistance when launching and cook 4 minutes.
