  1. One of my FAVORITE easy and healthy salads

    ✨ INGREDIENTS ✨
    * 16 oz. Orzo pasta
    * 1 Cup english cucumber
    * 3/4 Cup red onion
    * 1 red bell pepper
    * spinach leaves
    * 1 Cup kalamata olives
    * 1/2 Cup black olives
    * 1 Cup feta cheese crumbles

    For the Dressing:
    * 1 whole lemon
    * 1/2 Cup avocado oil
    * 1/4 Cup olive oil
    * 1 garlic clove
    * 1 1/2 tsp. Dried oregano
    * 1 tsp. black pepper
    * 1 tsp. salt

    ✨INSTRUCTIONS ✨
    1. Set a large pot of water on the stove on high heat.
    2. Prepare your vegetables as described in ingredients list. (watch video for a complete walkthrough of the ingredients prep.) Set them aside.
    3. Add the orzo to boiling water and cook to al dente. (tender but firm-about 10 minutes)
    4. In a separate medium bowl combine salad dressing ingredients.
    5. Whisk together all the salad dressing ingredients.
    6. Set aside.
    7. Chop the kalamata and black olives. set aside.
    8. When the orzo is cooked drain the orzo in a strainer.
    9. Rinse the orzo under cold water to cool it quickly.
    10. Drain orzo thoroughly and cool to room temperature.
    11. In a large salad bowl pour in the room temperature or colder orzo.
    12. Add the vegetables on top of the pasta.
    13. Layer the olives on top
    14. Toss the salad ingredients.
    15. Pour on the salad dressing.
    16. Add Feta cheese on top.
    17. Lightly toss to coat the salad in the dressing.
