Forgotten Italian Classics: Pampanella (Molise)
In Molise, pampanella was once baked under grape leaves and embers: pork, fire, and spice sealed in smoke. Today the oven replaces the pit, but the spirit stays the same: garlic, paprika, chili, and vinegar melting into deep red heat.
