Creamy Tuscan Shrimp Pasta
Ingredients (serves 3–4)
* 1 lb large shrimp, peeled & deveined
* 12 oz bow tie (farfalle) pasta
* 2 tbsp olive oil
* 3 cloves garlic, minced
* ½ tsp red pepper flakes (optional)
* 1 cup cherry tomatoes, halved
* ½ cup sun-dried tomatoes, sliced
* 1 cup coconut cream
* ½ cup chicken broth
* ½ cup freshly grated Parmesan
* 1–2 cups fresh spinach
* Salt & black pepper, to taste
* 1 tsp Italian seasoning

Instructions
1. Bring a large pot of salted water to a boil. Cook bow tie pasta until al dente. Reserve ½ cup pasta water, then drain.
2. Season shrimp with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear shrimp 1–2 minutes per side until just pink. Remove and set aside.
3. Lower heat. Add garlic and red pepper flakes to the same skillet. Cook 30 seconds until fragrant.
4. Stir in cherry tomatoes and sun-dried tomatoes. Cook 1–2 minutes until softened.
5. Pour in chicken broth, scraping up any browned bits from the pan.
6. Stir in coconut cream and Italian seasoning. Bring to a gentle simmer and cook 3–4 minutes until slightly thickened.
7. Add Parmesan and stir until melted. Add spinach and let wilt.
8. Add cooked pasta and shrimp back to the skillet. Toss to coat, adding reserved pasta water as needed to loosen the sauce.
9. Taste and adjust seasoning. Serve warm with extra Parmesan if desired.
