Ingredients
• 4 large eggs
• 2 sticks (1 cup) butter, softened
• 1 cup granulated sugar
• 3 teaspoons almond extract
• 1 cup all-purpose flour
• Red food coloring
• Green food coloring
• Apricot or raspberry preserves
• 6 ounces semi-sweet chocolate
• 1 tablespoon vegetable oil

Directions
1. Preheat oven to 350°F.
2. Grease three 8 x 8-inch cake pans. Set aside.
3. In a large mixing bowl, beat:
• Eggs
• Sugar
• Butter
• Almond extract
Mix until smooth and well combined.
4. Add flour and mix just until incorporated.
5. Divide batter evenly into three bowls (about 1 cup of batter per bowl).
6. Leave one bowl plain.
• Add 8 drops red food coloring to one bowl.
• Add 8 drops green food coloring to another bowl.
Mix each until color is evenly blended.
7. Spread one bowl of batter into each prepared pan.
8. Bake for 10–12 minutes, or until set.
Do not overbake.
9. Allow layers to cool completely.

Assembling the Layers
1. In a small saucepan or microwave-safe bowl, melt:
• Semi-sweet chocolate
• Vegetable oil
Stir until smooth.
2. Spread raspberry or apricot preserves over two of the cake layers.
3. Stack the layers carefully:
• One preserved layer
• Second preserved layer
• Plain layer on top
4. Spread melted chocolate over the top and sides of the stacked cake.
5. Let cool completely until chocolate is set.
6. Slice into small squares or rectangles.
