This sheet pan gnocchi is an easy dinner recipe for the in-between week before the new year. I season gnocchi, cannellini beans, red onions and garlic cloves with an Italian spice blend and roast them. In the last 5 minutes of oven time, I add chopped kale to the pan. The gnocchi and beans lightly brown. Then I mash the roasted garlic cloves with olive oil and fresh lemon juice. I fold everything into this zesty garlicky oil with grated parmesan and herbs.
