This is a high hydration Focaccia bread recipe.

I bake it with #sourdough but also add a pre-ferment made with 1 g of fresh yeast.
For the filling, I used pickled hot peppers, sun-dried tomatoes, green olives, chili flakes, some chorizo, Italian spices, and grated Parmesan and mozzarella.
Here are the ingredients:
**Sourdough Starter:**
– 30 g water
– 15 g sourdough starter
– 30 g bread flour
**Yeast Starter:**
– 1 g fresh yeast
– 30 g water
– 30 g flour
**Dough:**
– 220 g water + 30 g additional
– 350 g bread flour
– 60 g sourdough starter
– 80 g yeast starter
– 6 g salt
– 10 g olive oil
The preparation method combining warm and cold long fermentation makes this bread incredibly nutritious and easy to digest! The extended fermentation process enhances nutrient bioavailability, reduces gluten content for improved digestibility, and develops a rich, complex flavor.
