This may just be his best idea yet, here is how I made them. Ingredients • 1 lb lasagna noodles • 1 lb ground beef • Your favorite tomato sauce • 3 cloves garlic, minced • 1 cup ricotta • 8 oz shredded mozzarella • A handful of parsley, chopped • 1 egg • Salt & pepper Instructions Cook your lasagna noodles according to the package, then cut out circles the size of your muffin tin and set aside. Brown the beef in a pan, add the garlic and cook until fragrant, then stir in your tomato sauce and season to your preference. In a bowl mix together the ricotta, half the mozzarella, parsley, egg, salt, and pepper. Grease your muffin tin before adding the pasta. Start with a spoon of meat sauce, a lasagna circle, and some ricotta filling. Continue layering until you end with sauce. Top each muffin with the remaining mozzarella and bake at 375°F for 30 minutes. Let them set for about 15 minutes, then enjoy!
