Pollo in potacchio is the kind of dish that slows you down in the best way. I made it after someone from this community insisted. I tried it, and they were right: garlic, herbs, tomato and steady heat are all it needs. The chicken browns, the wine lifts the flavor, and the sauce builds quietly until everything feels round and calm.

Un suggerimento per un’altra ricetta di questa serie potrebbe essere la torta di ceci (in Liguria si chiama farinata ed a Pisa cecìna ma è praticamente la stessa cosa) una torta salata sottile fatta di farina di ceci, acqua ed olio, poi cotta in forno ad alta temperatura e condita con del pepe grattugiato. Ci sono tante ricette simili basate su semplici impasti di farina di ceci nei vari porti del Tirreno (ad esempio le panelle siciliane che invece di essere cotte al forno sono tagliate a rettangoli e fritte) ho sentito dire che ci sono simili ricette anche nei porti spagnoli e nordafricani del mediterraneo
