Crockpot’s Macaroni & Cheese
1 pound (16 ounces) elbow macaroni, uncooked
2 cans (12 ounces each)
evaporated milk
1 cup (4 ounces) mild
Cheddar cheese, shredded
1 cup (4 ounces) sharp
Cheddar cheese, shredded
1 cup (6 ounces) Swiss cheese, shredded
6 slices (about 4 ounces)
1 cup whole milk, plus additional for thinning
½ cup heavy cream
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon dry mustard
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon smoked paprika
4 tablespoons butter, plus more for bottom of crockpot

Use nonstick spray or brush melted butter in the crockpot. Add all ingredients to crockpot, stir, cover, cook on low for 1 hour, stir, cook for one additional hour. Thin with milk until desired consistency is achieved.

  2. Do you happen to have a good suggestion for a disability friendly canopener? I've tried several and when I need it, they never seem to work and I'm stuck calling my husband into the kitchen to do it. I can manage 'normally' for about 60% of my life, but when my hands choose to go sideways on me and I can't really grip or twist (the old standup electric ones are actually hard, because you have to hold and jiggle and yet still keep stable the can and if I can do ~that~ I could use a normal one anyway. Help? Or should I just go ahead and get that sweatshirt for my husband with "Walking Canopener" on it?

  3. I don't have a microwave so i sometimes use the airfryer to melt things in 3-4mins. Gotta wear gloves though

I love making pulled pork in my crock pot, get a pork shoulder/boston butt and stick it in there with a little water (if youre making baja pork add orange+lime halves or juice and taco seasoning, if youre making southern style add paprika, brown sugar, garlic powder, onion powder, and some red pepper flakes if u want heat). Leave it on low for 12 hours, then if possible separate the meat from the liquid. The liquid will go jiggly because of the collagen in the bones, you can add it back to the meat after, and it allows for easy fat separation. If you cant do that its ok to just store it all together and reheat when needed

  6. Any advice for someone who struggles with doing the dishes after? That's probably one of my biggest hurdles when it comes to cooking for myself (outside of figuring out WHAT to cook). I can do basically anything else but I struggle so much when it comes to doing dishes. I don't have a dishwasher and live in a small apartment so I can't just buy one. (I don't have room for one of those tiny countertop ones either.) I already use disposable plates/cutlery because of it but if I try to cook properly that's pots and pans and everything that I have to wash after.

  8. I just want to share my opinion on the cheese. All I would recommend differently if you able to(I do understand the intention of the video so I'm not meaning to criticize) but your recipe consistency will improve dramatically if you able to grate fresh block cheese instead using bagged cheese. Bagged cheese is essentially coated in corn starch so you are adding additional emulsifiers into your recipe in which the American cheese was already doing, so that's why if you make Mac and cheese it was becoming more claggy and stuck together instead of creamy and smooth sauce. You can always use a food processor to grate cheese that would difficult to hold otherwise!

  9. This is amazing for me! I’m disabled and I have ARFID, and Mac and cheese is a lifelong comfort food. But my illness has progressed and coming is a real obstacle for me. This is incredible timing for me, thank you so much!!

  10. Sorry I'm obviously ignorant here but can I ask what makes it disability friendly? Is it because you don't have to stand/sit over a hob for long periods of time? Genuine question as a non-disabled person, I would like to learn ❤

  11. Never used prepackaged cheese ever!!! Shred your block cheese. Dairy is ALREADY DANGEROUS FOR US.

  12. Crock pot liners would make this even easier to clean up when you're done cooking. Toss in some pre-cooked chicken, bacon, or ham would add protein, you could also try a can of tuna. Change up the flavor by adding hot sauce and blue cheese or ranch, or taco seasoning and sour cream. 😊

  13. What's disability friendly about it? What kind of disability are we talking because this is still a lot of work for someone with disabilities.

  14. i would love a friendly stuffing recipe. I tend to knick myself with the bread knife when I make my own. I really hate the taste of the Stove Top stuff but I love the savoryness of a good stuffing

  15. American cheese has emulsifying salts like sodium citrate. Meaning the fats and water don't separate 🙂 that's why it's preferable for Mac n cheese! Also, the pre shredded has anti caking agents, so the American cheese can help with the texture. I know not everyone has the ability to shred their own cheese!

  16. I really love this series. As well as being suitable for disabilities, I think this would work well for people who struggle to have the mental energy to cook and look after themselves like some people with depression, ADHD etc.

  17. If people get annoying about the cheese – it has SODIUM CITRATE in it which makes it melt and get all smooth.
    If you don't want to use it you can just buy sodium citrate separately but it's genuinely so much easier to just get kraft slices or American cheese
