INGREDIENTS:
1 packet of Savoiardi biscuits (recommended: Matilde Vicenzi)
500 g / 17.6 oz mascarpone cheese (1 tub)
5 large eggs
5 tbsp white sugar
Cocoa powder (for dusting)
3 Moka pot Italian espresso coffee
Method
Making mascarpone cream
1) Separate the egg yolks and egg whites into two clean mixing bowls.
2) Wash your hands, then use an electric mixer (or stand mixer) to beat the yolks on medium speed. After about 20 seconds, increase to high speed and keep whisking until they start to look pale and creamy.
3) Add one tablespoon of sugar to the yolks and continue mixing until the bubbles disappear and the mixture thickens. Scrape the sides and bottom of the bowl as you go so everything blends evenly.
4) Add the mascarpone to the egg yolk mixture and mix gently on medium speed, then a little faster until the texture becomes smooth and velvety. Set aside.
5) In the second large bowl where we placed the egg whites, start beating them on medium speed until they become foamy. Add the sugar (gradually) one tablespoon at a time (four tablespoons in total), mixing well after each addition. Then increase the speed to high and continue for about two minutes until you get a creamy, glossy texture but not overly bubbly.
6) Using a spatula, gently fold the whipped egg whites into the mascarpone mixture. Take your time and move slowly so the cream stays light and fluffy. Your mascarpone cream is now ready to use.
Assembling the Tiramisu
1) If you like, wear gloves for easier handling. Dip each Savoiardi biscuit flat into the espresso mixture for about three seconds total, making sure both sides are soaked but not soggy. Place each biscuit sugar-side down in the tray.
2) Continue until the bottom of your tray is completely covered, filling in any gaps with small biscuit pieces.
3) Spread a generous layer of mascarpone cream over the biscuits, smoothing it evenly from corner to corner.
4) Sift cocoa powder evenly over the cream until it is completely covered.

Amazing, that a man who lives ten thousand miles away from me, which I have never met, has forever changed the way that I cook Italian food. God bless you Vincenzo. Your dedication and passion for authentic and delicious food has been an inspiration that will last my lifetime
If you'd HAVE to make a spaghetti cheese soup, how would you do it? I searched for recipes and I didn't find any! Of course it's a bit of a stretch "spaghetii/cheese soup" (with vegetables and maybe bacon and ham?) Why not? I mean, there's theese noodle soup recipes out there, so why not use spaghetti? Cooking the spaghetti for a minute whilst preparing the soup: onions, garlic, cheeses, blending them together, vegetables (optional), adding baked bacon/ham then add the spaghetti to it and: ENJOY!! 😀 Is this such a weird idea I just got? If you'd make something like this, show us how to or even better: show us how to make multiple kinda pasta soups and claim them as your own unique recipes afterwards, haha. So, whilst searching for a 'spaghetti/cheese soup", I bumped into this here on YT: "CREAMY SPAGHETTI & CHEESE (CHEESE SPAGHETTI) RECIPE!" Oh pls react to this!! I mean… "pasta soup"… that's me being an idiot, but after watching THAT video… is that normal in the USA? Maybe it tastes nice but to me, it looks like somebody's sick and threw up in his/her pan.:(
Tiramisù = “Pick Me Up” In Sicilian
Because Coffee Picks You Up (Energised)
My favorite desert!
I am in agreement on the no alcohol. If I want good mascarpone I have to make it. Now I want tiramisu.
Beautiful👌
"Place it in the fridge overnight"
Now this is a crucial step that gets forgotten often! It's very important to have that authentic tiramisu flavor 😊
Amazing recipe😍 Do we need the tiramisu to be cold or in room temperature?
You changed my life, Vincenzo! My Tiramisu is the best because of you!😛
So easy even kids do that in Friuli, Tolmezzo is its birthplace.
I would never use wine with tiramisu that’s madness. Wine and coffee 🤮 Amaretto is too sweet, Frangelico with coffee is good, so is Italian Brandy hehehe. Certain Italian bitters work too. Depends on the coffee.
For the egg whites (meringue) it’s stiff peaks or nothing for me, must use a little cream of tartar, doesn’t even need much sugar just to taste.
You are mean, now I am craving your Tiramisu and I don’t have the ingredients to make it. Even if I did, imagine having to wait to eat this for entire night! You are a strong man, Vincenzo!
Hi Vincenzo – I actually am having tiramisu now. It’s amazing!
Grazie mille Vincenzo
A fun fact salmonella comes from the egg shell not the raw eggs themselves
How much do you pay for mascarpone in Australia ? Must be so expensive 🥲
I call tiramisu the lasagna of desserts.
Why did my mascarpone mixture curd when I mixed it with the egg yolks?
Now, how about you teach us how to bake savoiardi? It’s not heard of in any of my grocery stores 🥺

Every time I've ever had Tiramisu it has had some type of alcohol in it. I'm going to make this with a dark cacao liqueur like Drillaud Crème de Cacao Dark Chocolate Liqueur. It should elevate the taste of chocolate a little bit. Just to experiment a little bit.
