Disability-Friendly Boursin Pasta Sauce
1 brick of Boursin
2 tsp dehydrated minced garlic
2 handfuls spinach
1 pint of grape or cherry tomatoes
2 tbs olive oil
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp pepper
1/2 tsp red pepper flakes, optional
Add Boursin to the center of a foil pan. Surround by dehydrated minced garlic, then spinach, then cherry tomatoes. Top everything with the olive oil and remaining seasonings. Air fry at 400 for 13 minutes. Stir, and serve on top of pasta.

I've made this but it was always overcomplicated by using an immersion blender. Why didn't I think to just cook it in a pie plate and mash with a spoon!?! Thank you!

So smart to layer the spinach on top of the dehydrated garlic! And bonus, the water from the spinach has a bunch of nutrients that you’d normally strain but since gets emulsified with the cheese it’s all still in there.

I am not disabled, and I don't have anyone in my life who is. But I express my love through feeding others, and you never know what could happen. What you are doing is super important, giving others back the agency to make something they can be excited about eating, or feeding those they love.

So many times the advice we get is to try “easier” alternatives, which end up being nothing but microwaved slop or unflavoured drizzle.
