Escarole is one of the most misunderstood vegetables out there. It looks like normal lettuce, but try eating it raw and… well, you’ll understand why most people avoid it. In Italy, though, escarole is cooked in all kinds of delicious ways — and today we’re sharing three of our favorites.
In this video, Eva’s showing how to prepare escarole so it actually tastes good. And you might be surprised by the strange-looking dish that, out of all three, is our favorite!

What has been your experience with escarole? Never been sure what it is? Maybe you already love it? Let us know, we're curious!
I grew up in NY, my mom would make escarole by sautéing in a little olive oil, garlic and a bit of red pepper flakes. I remember eating it as a child and liking it.
I love escarole and endive salad. Just olive oil and salt. Yum.

I love you and your videos and recipes, great as always, but I have one important comment please fix the white balance on your camera or get a new camera, whenever there is something white for example in 8:39 the flour, or sometimes a white pan, its not visible and it lowers the quality.

I’ve never tried it. I love Swiss chard, dislike kale.
I’ve been craving creamed spinach since the weather got wet and cold. Or roasted Brussels sprouts. I love veggies but especially leafy greens.

How would a few copped nuts be as a garnish?
Instead of anchovies i used anchovy paste, it is perhaps a good remplacement
One of my favorite dishes. I grew up eating these recipes. My grandmother and my mother made these especially on Christmas Eve along with escarole soup or (Italian wedding soup).
My paternal grandparents were from Caltanessetta.. I grew up on these foods!! (With a loaf of Italian bread!!😉)…scadaula, cardoonies, spinach baked into the bread, motsaradi, chicora, My parents wrote all the family recipes down for us kids. The Legacy passed !!
My dad used to grow it in our vegetable garden, and yes, we ate it raw as a salad with olive oil, my Calabrese dad's homemade red wine vinegar and salt! We always had a scarpetta to sop-up the oily vinegar juice! Bitter greens are very good for you, at least that was his story! Lived til he was 95, and drank wine every day! p.s. we never cooked it…
So it’s not lettuce it’s a leafy green to heat hot. I already love it and I’ve never tried it. 😂

I knew it looked familiar. In Dutch it’s ‘andijvie’, really good hearty cold weather food. Great with Dutch style smoked sausage and added to buttery mashed potatoes.
