Let’s make soft and delicious Italian torrone, also known as nougat! Today I’m making my torrone with almonds and pistachios, as I think the colour of the pistachios in the sliced torrone looks so impressive! But the great thing about making your own torrone (nougat) is that you can add whatever nuts you like! It’s a staple in Italian households at Christmas for a reason!!

2 sheets of edible wafer paper
1 3/4 cup (425 grams) nuts, toasted (I used half pistachios and half almonds)
1 vanilla bean
1/2 cup (140 grams) honey
1 1/3 cup (255 grams) sugar
2/3 cup (150 ml) water
2 egg whites

    Besides panettone, nougat is one of my favourite Christmas treats. Persian Nougat is to die for. The distinctive flavours of cardamom and rose water combine so well.

    I've never made nougat at home. It's always been store bought from confectionery specialists.

  5. I had this once or twice as a child nearly 30 years ago and it has been randomly coming back to me over the years, but any time I tried to google it or explain it to others, i got nowhere. I am so happy to find this video! I feel less insane now!
