Anyways, here is how to make the cookies: Cookies: •1 cup salted butter, softened •1 3/4 cup sugar •16 oz whole milk ricotta •2 eggs •3.5 cups flour •2 tbs corn starch •2 tbs baking powder •2 tsp vanilla Icing: •2 cups powder sugar •3 tbs heavy cream •1.5 tbs lemon juice •1/2 tsp vanilla Cream butter and sugar until smooth, then mix in eggs, ricotta, and vanilla. Add flour, cornstarch, and baking powder and stir until combined. Scoop about 2 tablespoons of dough onto a lined baking sheet and bake at 350°F for 12 minutes. Let cool, then whisk together powdered sugar, cream, lemon juice, and vanilla until smooth. Spoon glaze over each cookie and add sprinkles if you’d like.
