Shrimp Scampi

Ingredients:

1 Lb Shrimp
1/2 Lb Linguine
3 Tbsp Olive Oil
5 Tbsp Butter
3 Tbsp Shallot (diced)
4 Garlic Cloves (minced)
1/2 tsp Red Pepper Flake
1/4 Cup White Wine
1/2 Lemon (juiced)
1/4 Cup Parsley (chopped)
Salt
Black Pepper

Instructions:

Bring 6 qts of water to a boil and generously season with salt. Cook the pasta to the instructions on the package. Once pasta is just about cooked to 80%, reserve 1 cup of pasta water and drain.

In a large pan on medium heat add olive oil and devein/deshelled shrimp. Season with salt and pepper. Cook the shrimp for about 2-4 minutes or until they turn pink. Remove and set aside.

Next add 3 Tbsp of butter, shallots, red pepper flake, and garlic. Season with salt and pepper to taste. Once shallots and garlic are translucent, add wine and lemon juice. Simmer for 3-5 minutes.

Add linguine and about 1/2 Cup of pasta water to the pan and toss. Cook the pasta the remaining 20% till al dente. Add the remaining 2 Tbsp of butter. Toss and mix the pasta until the sauce is thickened and coating the pasta. (Add more pasta water if needed). Finally mix in chopped parsley and adjust the seasoning to your taste.

  1. What about Parmeggiano reggiano? Do we shreds and add it to the plate upon serving? (On top of the plated dish). Or it’s best to be added to the pot to be mixed well before serving?
