  2. 27:58 There is waste in the frozen mirepoix. It's not like they've used the skins of the onions, the ends of the carrots and the bottom and leaves of the celery in the frozen product. The waste is just left with the food processor rather than going to the consumer. The plastic bag is also waste.

  6. I like the idea of emulsifying the lentils in a food processor for the meatballs. His videos are always chock full of interesting ways to prepare veggies.

  7. Please be careful about keeping butternut squash too long. We did this a few months ago, regretted it. We both were sick as dogs, and research showed that if you keep it too long it becomes utterly toxic and evil. As the Americans would say, there wasn't a cookie that remained untossed! You really don't want to do this!

I love Jamie's recipes, but at the risk of being a nit picker , rice needs thorough rinsing to wash away the talc used as a free flow agent , and to remove the brown skin , paprika can become bitter if you fry it , and unless you have organically grown veg , you should remove the skin, because any pesticides will be absorbed into the skin.
